2 medium eggpant
1 lb shrimp (16-20) * Smaller will work best
1 teaspoon Caribbean Green Seasoning
4 cloves garlic
1/2 medium onion
2 Birds Eye Pepper (optional)
1/4 teaspoon black pepper
4-6 small potatoes
2 tablespoons vegetable oil (divided)
1 teaspoon salt (divided)
1/2 teaspoon curry powder
1 1/2 cups water
6-8 cherry tomatoes (optional)
1 tablespoon Parsley (chopped)
