For this curry duck recipe you will need…
8-10 lbs Duck
1 tablespoon salt
1/4 teaspoon black pepper
2-3 tablespoon Caribbean Green seasoning
1 teaspoon Roasted Geera (Cumin)
1 tablespoon Amchar Masalla
8 cloves garlic
2 scallions
1 small onion
1 medium tomato
1/2 small onion
5 sprigs thyme
1 big leaf thyme (podina aka Spanish thyme)
2-3 scotch bonnet peppers
2-3 cups water
4 tablespoon curry powder
3-4 tablespoon veg oil
3/4 cup chopped cilantro
2-3 cups water
